Roasted Tomato Soup
The weather has turned a little colder today and so I thought I'd rustle up a pot of this deliciously simple soup
Roasted Tomato Soup as easy as 1... 2... 3...
Ingredients
As illustrated on my tomato soup print, you can vary the quantities and add any other vegetables but if you want it to be a tomato soup you will need at least half tomatoes
1. Chop
Roughly chop the vegetables and arrange in a baking tray
2. Roast
Sprinkle with a little olive oil and put in a medium hot oven...
...until they're soft and a little crispy at the edges
3. Blend
I use an old hand blender my mother gave me when I went to art school in the late 1980s, it's still going strong after so many years. You can use a jug blender or even just a fork to mash it up.
